This March, our pizza of the month is the OMG Mushroom Pizza, complete with fresh mushrooms and a ZeroCarb Pizza Crust. Here’s how to create your own:

First, start by thawing out your diabetic-friendly pizza crust for 5-10 minutes, and preheating your oven to 500 degrees Fahrenheit. Then, grab a pan and mix in the half & half, heavy cream, sea salt, black pepper, and the mushrooms. Bring that to a boil and turn the heat to a medium simmer until mushrooms are cooked and the sauce has thickened - let rest for 10 minutes and then blend.

Next, you are ready to spread the sauce on top of your keto-friendly pizza crust and top with mozzarella cheese. Add the sliced portobello mushroom then top with more mozzarella cheese.

Finally, place your pizza in the oven for 8 to 10 minutes or until the cheese turns golden brown!

Ingredients

  • 1 cup of half & half

  • 1 cup of heavy cream

  • 3 cups of portobello mushrooms

  • ½ cup Mozzarella cheese 

  • 1 tsp sea salt

  • ½ tsp black pepper

  • 1 ZeroCarb Pizza Crust

Directions:

  1. Thaw your protein-based ZeroCarb Pizza Crust for 5-10 minutes while you preheat your over to 500 degrees Fahrenheit.

  2. In a pan, mix in half & half, heavy cream, sea salt, black pepper, and portobello mushrooms.

  3. Bring pan to a boil and then turn the heat down to a medium simmer until mushrooms are cooked and the sauce has thickened. Let rest for 10 minutes before stirring.

  4. Spread the mixture on your zero-carb alternative pizza crust and top with mozzarella cheese. Add portobello mushroom slices and top with remaining cheese.

  5. Place pizza in oven for 8-10 minutes or until cheese turns golden brown.

  6. Remove your ZeroCarb pizza from oven and let sit for 2-3 minutes before enjoying.
